Not filtered not fined. Night harvest, the grapes were picked slightly underripe to take advantage of the aromatic potential of the berries while limiting their sugar content. Fermentation, carried out with specially selected yeast strains, allows these aromas to be revealed while limiting the amount of alcohol produced.
