Why is our wine special? Our grapes ripen on high-quality soil on the green hills of Goriška Brda in a small private winery with heritage and tradition where warm Mediterranean air and cold Alpine wind mix. They both caress and lash the grapes alongside authentic techniques and recipes which is how it acquires its distinctive flavour. The grapes are harvested by hand, and only the best are selected for wine, which is submerged in the clean, blue Adriatic Sea. A year later, the Luxury sparkling wine Mare Santo® is born.

Why 20 meters undersea?

As commonly known, the sea, with its salt water, is extremely healthy and beneficial. And what is good for a man will without a doubt be also good for wine. The first bottles were submerged almost a quarter of a century ago, and since then, we have been continuously working on improvements, flavour, and bottles. The motion of the sea current at 20 meters of depth keeps the sparkling wine vital and alive. The sea also gives many minerals to the sparkling wine through the cork, which gives the wine a unique flavour. The efforts have most certainly paid off because our wine is exceptionally outstanding.

Cuvée Prestige

Elegant aperitif. The liveliness of bubbles is downright refreshing.

Light yellow with green reflections, continuous perlage.

Born of a unique 50% Rebula, 50% Chardonnay blend, hand harvested and whole bunch pressed. Mare Santo’s Cuvee Prestige is a remarkable Slovenian wine, aged uniquely for 12 months (24months for the Premium release) at a depth of 20 meters in the Adriatic Sea, which imparts an extraordinary character. In the glass, it presents a radiant golden hue with flecks of brilliance, hinting at its depth and complexity. The nose is beautifully layered, offering aromas of ripe orchard fruits like pear and golden apple, mingled with delicate sea minerals, a whisper of wild herbs, and hints of toasted vanilla.

On the palate, it is both lush and lively, with a perfect balance between freshness and a creamy texture that highlights flavours of apricot, citrus zest, and a touch of salinity. Its lengthy, mineral finish carries an essence of the sea, making each sip an unforgettable experience—a must-try for those in search of wines with true character and a unique aging story. The Cuvée Prestige may be served as a refreshing aperitif, excellent with fish dishes and home- made fresh pasta with fresh Adriatic scampi.

ROSÉ

The charm of full structure and the enchanting elegance only rosé wines have.

Appearance:
Gently pink with violet reflections.

Aroma:
Wild berries, cherries and raspberries.

Flavour:
Develops with a pleasant feeling of freshness and ends with a flavour of sweet almonds and currant.

Born of a unique 100% Pinot Noir, hand harvested and whole bunch pressed. Mare Santo’s Rosé is a rare and captivating wine, aged for 12 months (24months for the Premium release) beneath the Adriatic Sea, lending it a truly unique profile. This rosé enchants with a delicate coral-pink hue and a fine, shimmering clarity that hints at its underwater maturation. On the nose, it blooms with aromas of wild strawberry, raspberry, and rose petal, woven with a subtle, briny minerality that adds depth and intrigue. The palate is fresh and elegant, revealing bright red berry flavours, a hint of grapefruit, and a soft, creamy texture balanced by lively acidity.

Its long, mineral finish is beautifully nuanced with a whisper of sea breeze—a refined, one-of-a-kind rosé experience that invites connoisseurs to discover the elegance of Slovenian winemaking. The Rosé can be served as a refreshing aperitif but will also be excellent with meat (marinated beef carpaccio, T-bone), fish dishes (marinated salmon fillet with Mediterranean salt and herbs) and pasta (spiced up fresh pasta).
